Chopped Thai Salad

I am sharing this love story only because the world deserves to know and so do your taste buds.

this is my GO TO meal. For parties. Meal prep. Any excuse I have to make this dish, I do.

it’s such a healthy, fresh & flavorful recipe.

INGREDIENTS

2 1/2 cup of cabbage - I do 1/2 Napa, 1/2 purple

2 cups of lettuce - whatever your heart desires

2 cup of carrots - shredded

1 cup of cucumber - diced

1/2 cup Edamame - thawed if using frozen

2 bell peppers - diced, I like red & green for this one

1/2 cup cilantro - chopped

2-4 green onions - chopped

DRESSING

1/4 cup peanut butter

3 TBSP Soy sauce or coconut aminos for GF option

3 TBSP Sesame oil

Juice of 1 Lime or 2 tablespoons

2 TBSP Maple syrup

OPTIONAL TOPPINGS

  • peanuts

  • Crunchy edamame

  • Sesame seeds

INSTRUCTIONS

  1. Wash all produce

  2. Shredded or chop the cabbage & lettuce place in a large bowl

  3. Add all other ingredients and mix well! I always use my hands :)

  4. For the dressing, combine ingredients in a container with a lid - I like to SHAKE IT!

  5. SERVE! I like to have the dressing on the side for this one, but feel free to toss it if you desire

  6. ENJOY!!!
